How to make Stuffed Peppers
Ingredients:
- 1tbs Olive Oil
- 1 medium onion
- 2 tbs minced garlic
- 1/2 tsp Salt
- 1/8 tsp Pepper
- 4 Red Bell Peppers
- 12 ounces chicken, turkey sausage (no casing), or whatever meat/meat substitute you want
- I use Italian sausage
- 1 Diced tomato
- 2 c Water
- 3/4 c Couscous
- 1/2 c Shredded Monterrey Jack Cheese
Preheat oven to 400 degrees
Directions:
- Clean, halve and gut peppers, place in a baking dish with 1 cup of water on the bottom of dish
- Heat oil in skillet over medium heat.
- Add onion, garlic, salt and pepper.
- Cook about 3 min or until onion is translucent
- Add meat and cook, break up sausage until browned (about 4 min)
- Add tomatoes and 1 c water
- Cook until thickened (about 5 min)
- Add couscous and cook until couscous is ready
- Fill halved peppers with mixture
- Cover dish with tin foil
Bake until peppers are tender 35-40 min
Sprinkle with cheese, then bake another 10-15 min uncovered
