Stuffed Peppers Recipe

How to make Stuffed Peppers

Ingredients:
  • 1tbs Olive Oil
  • 1 medium onion
  • 2 tbs minced garlic
  • 1/2 tsp Salt
  • 1/8 tsp Pepper
  • 4 Red Bell Peppers
  • 12 ounces chicken, turkey sausage (no casing), or whatever meat/meat substitute you want
      • I use Italian sausage
  • 1 Diced tomato
  • 2 c Water
  • 3/4 c Couscous
  • 1/2 c Shredded Monterrey Jack Cheese
NOTE: I personally don't use onions, as for the garlic and the tomatoes I use Hunts Diced Tomatoes With Basil, Garlic & Oregano 14.5oz and cook the couscous in it. I also cook the sausage separately then add the couscous mixture after.

Preheat oven to 400 degrees

Directions:
  1. Clean, halve and gut peppers, place in a baking dish with 1 cup of water on the bottom of dish
  2. Heat oil in skillet over medium heat.
  3. Add onion, garlic, salt and pepper.
  4. Cook about 3 min or until onion is translucent
  5. Add meat and cook, break up sausage until browned (about 4 min)
  6. Add tomatoes and 1 c water
  7. Cook until thickened (about 5 min) 
  8. Add couscous and cook until couscous is ready
  9. Fill halved peppers with mixture
  10. Cover dish with tin foil
Bake until peppers are tender 35-40 min

Sprinkle with cheese, then bake another 10-15 min uncovered
